Pineapple Mango Chicken with Colored Peppers

Ingredients (Serves 4)

  • Chicken Breast (boneless, skinless) – 4 pieces (about 1.5 lbs)
  • Fresh Pineapple – 1 cup (diced)
  • Mango – 1 cup (diced)
  • Bell Peppers – 3 (1 each of red, yellow, and green), sliced
  • Onion – 1 medium, thinly sliced
  • Garlic – 2 cloves, minced
  • Olive Oil – 2 tbsp
  • Low-Sodium Soy Sauce – 2 tbsp
  • Honey – 1 tbsp
  • Lime Juice – 2 tbsp (about 1 lime)
  • Cilantro – ¼ cup, chopped (optional)
  • Salt – ½ tsp
  • Black Pepper – ¼ tsp
  • Ground Ginger – ¼ tsp
  • Red Pepper Flakes – ¼ tsp (optional for heat)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, black pepper, and ground ginger. Set aside.
  2. Cook the Chicken: Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set it aside to rest.
  3. Sauté Vegetables: In the same skillet, add the remaining 1 tbsp of olive oil. Sauté the sliced onion, bell peppers, and garlic for about 5 minutes until they are slightly tender but still vibrant in color.
  4. Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey, and lime juice.
  5. Add Fruits and Combine: Return the chicken to the skillet and add the diced pineapple and mango. Pour the sauce over the chicken and vegetables. Cook for another 3-4 minutes, letting the flavors blend and the fruits soften.
  6. Garnish and Serve: Remove from heat, sprinkle with freshly chopped cilantro (if desired), and a pinch of red pepper flakes for a slight kick. Serve hot with your choice of brown rice or quinoa for a complete meal.
