Pineapple Mango Chicken with Colored Peppers
Ingredients (Serves 4)
- Chicken Breast (boneless, skinless) – 4 pieces (about 1.5 lbs)
- Fresh Pineapple – 1 cup (diced)
- Mango – 1 cup (diced)
- Bell Peppers – 3 (1 each of red, yellow, and green), sliced
- Onion – 1 medium, thinly sliced
- Garlic – 2 cloves, minced
- Olive Oil – 2 tbsp
- Low-Sodium Soy Sauce – 2 tbsp
- Honey – 1 tbsp
- Lime Juice – 2 tbsp (about 1 lime)
- Cilantro – ¼ cup, chopped (optional)
- Salt – ½ tsp
- Black Pepper – ¼ tsp
- Ground Ginger – ¼ tsp
- Red Pepper Flakes – ¼ tsp (optional for heat)
Instructions
- Prepare the Chicken: Season the chicken breasts with salt, black pepper, and ground ginger. Set aside.
- Cook the Chicken: Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set it aside to rest.
- Sauté Vegetables: In the same skillet, add the remaining 1 tbsp of olive oil. Sauté the sliced onion, bell peppers, and garlic for about 5 minutes until they are slightly tender but still vibrant in color.
- Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey, and lime juice.
- Add Fruits and Combine: Return the chicken to the skillet and add the diced pineapple and mango. Pour the sauce over the chicken and vegetables. Cook for another 3-4 minutes, letting the flavors blend and the fruits soften.
- Garnish and Serve: Remove from heat, sprinkle with freshly chopped cilantro (if desired), and a pinch of red pepper flakes for a slight kick. Serve hot with your choice of brown rice or quinoa for a complete meal.
