Pineapple Mango Salsa Recipe

Servings: 4 (about 1/2 cup per serving)

Ingredients:

  • 1 cup fresh pineapple, diced (available from South Jersey farms)
  • 1 cup fresh mango, diced
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño pepper, seeded and minced (optional, for spice)
  • Juice of 1 lime (about 2 tablespoons)
  • Salt, to taste

Instructions:

  1. In a medium bowl, combine diced pineapple, mango, red bell pepper, red onion, and cilantro.
  2. Add the jalapeño if you want a bit of heat.
  3. Squeeze fresh lime juice over the ingredients and add a pinch of salt to taste.
  4. Toss everything together until well mixed.
  5. Let the salsa sit for 10-15 minutes for flavors to meld, then serve!
